Liquid nitrogen steps in wherever dry ice is not enough: at −196 °C metals shrink, products freeze instantly and biological material is preserved with its structure intact.

Safety notes
- Oxygen displacement in confined spaces is lethal; an alarm system is essential.
- LN2 contact causes severe cryogenic burns — full protective clothing is required.
- The pressure relief line must never be closed while transporting a dewar.
